Akeshi's Garlic Shrimp Spaghetti: A Flavorful Weeknight Delight

Akeshi Akinseye's homemade recipe

Ingredients:

  • 1 lb deveined Argentinean peeled & deveined shrimp

  • Red pepper flakes

  • Olive Oil

  • Green Beans

  • Carrots, diced

  • 1/2 Red bell pepper

  • 1/2 Green bell pepper

  • Garlic cloves

  • Spices: Thyme, bouillon cubes/powder, salt, curry, white pepper

  • Toppings: Fresh parsley or chopped scallions

  • (Optional) Freshly grated parmesan cheese

Shrimp spaghetti with fresh veggies

Directions:

  1. Cook the pasta according to package instructions, drain, and set aside. Drizzle a bit of olive oil over the cooked pasta to prevent sticking.

  2. Dice and prep the onions, carrots, bell peppers, and green beans.

  3. In a large skillet, heat olive oil over medium heat. Add onions and garlic, then stir in the prepped vegetables.

  4. Season with thyme, a pinch of curry, red pepper flakes, salt, and bouillon cubes/powder. Stir and cook for 2-3 minutes until the vegetables are tender.

  5. Add the shrimp to the skillet and cook for about 3-4 minutes, until pink and cooked through.

  6. Add the cooked pasta to the skillet and toss until evenly coated with the shrimp and vegetable mixture.

  7. Serve hot and garnish with freshly chopped parsley or scallions. For an extra indulgence, sprinkle with freshly grated parmesan cheese.
