Ingredients:

  • 1 cup of cherry tomatoes, halved

  • 1 cucumber, sliced

  • 1 avocado, diced

  • 1/2 cup of sliced almonds

  • 1/4 cup of crumbled feta cheese (optional)

For the dressing:

  • 1/4 cup of extra-virgin olive oil

  • 2 tablespoons of white wine vinegar

  • 1 tablespoon of Dijon mustard

  • 1 tablespoon of honey

  • Salt and pepper to taste


Instructions:

  1. Wash and dry the lettuce and spinach leaves. Tear the lettuce leaves into bite-sized pieces and place them in a large salad bowl.

  2. Add the baby spinach leaves, cherry tomatoes, sliced cucumber and diced avocado to the bowl.

  3. In a small skillet, toast the sliced almonds over medium heat until they turn golden brown. Add the toasted almonds to the salad.

  4. If using feta cheese, crumble it over the salad.

  5. In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, honey, salt and pepper until well combined.

  6. Drizzle the dressing over the salad and toss gently to combine.

  7. Serve immediately and enjoy your delicious and healthy spring salad!

Variations:

  • You can add other seasonal vegetables such as radishes, sugar snap peas, or asparagus to your salad.

  • For extra protein, you can add grilled chicken, shrimp or tofu to your salad.
